No. See Category:Anglican churches in Cheshire for an example of how Commons has determined how the consensus on {{DEFAULTSORT}}ing should appear. I have only reached Cumbria so far, so you shouldn't rely on anything thereafter as representative of how it should look. I suggest you're both confused by the way things are done on Commons, because we here have no need to follow what is done on your home project, Wikipedia. Here we apply taxonomy to facilitate the easy finding of categories. To do so, we follow the English language convention of reading and writing from left to right. Most people would expect to find St Mary churches listed under "M", as they are, say in gazetteers. From experience, your way results in requiring too many overrides of {{DEFAULTSORT}} to be efficient. That's a strong indication that the DEFSORT is suboptimal, or as we call it, wrong. The way we do it on Commons requires only one pipe, e.g. for "St Mary churches in X" to pipe "|location" so that they then appear in location order, which is the only place they are expected to appear so ordered.
