d mustard greens, cab-bage, kale, and coUards, which, up totwelve years ago, were supposed to havelittle food value, as compared to meat,bread and dried beans, corn, and potatoes. In fact, the experts of ten or twentyyears ago declared that these vegetableswere needed in the diet only to supplywater, certain mineral salts, and rough-age. Now, however, it is known that thenewly-found vitamines contained in thesesalad vegetables, and in such roots ascarrots and yellow turnips, and suchvegetable fruits as tomatoes and squash,and also in fresh snap-beans and greenpeas, give pep to the mind and body,make children grow, and keep the systemin good working order. Those who, through poverty, famine, orimprisonment, are unable to get freshvegetables, milk and butter, suffer andeventually die from certain diseases—scurvy, rickets, beri-beri, pellagra, and akind of sore eyes which blinded thousandsof children in war-stricken Europe.
