Peel these, remove the inner seed and use as a summer squash type vegetable. Little ones are sweeter and tender. In Mexico, there are many varieties. He says it's delicious chopped, mixed with onions, jalapeno, garlic, tomatoes, and roasted in the oven until everything is tender and the flavors have melded. Top with sour cream.
