Les otolithes (pierres d'oreille) sont de petites structures calcaire que l'on trouve dans la tête des poissons. L'otolithe est un outil important pour comprendre la vie des poissons et de leurs populations.

Les anneaux de croissance enregistrent l'âge et la croissance d'un poisson, de la date de l'éclosion jusqu'au moment de la mort. Des anneaux de croissance se forment et enregistrent en détail l'âge et les modes de croissance. Ils sont visibles au microscope.
