"Le pélican gastronome" a été commandé à Emmanuel Frémiet en 1890 par l'industriel et banquier Stéphane Adolphe Dervillé pour le décor de la salle à manger de son hôtel particulier du 35 rue Fortuny à Paris (cet hôtel avait auparavant appartenu à Sarah Bernhardt).
