Colomba Pasquale ("Easter Dove" in English) or Colomba di Pasqua is an Easter counterpart of the two well-known Italian Christmas desserts, panettone and pandoro. The dough for the Colomba is made in a similar manner to panettone, with flour, eggs, sugar, natural yeast and butter; unlike panettone, it usually contains candied peel and no raisins. The dough is then fashioned into a dove shape (colomba in Italian) and finally is topped with pearl sugar and almonds before being baked. The Colomba di Pasqua was commercialised by the Milanese baker and businessman Angelo Motta as an Easter version of the Christmas speciality panettone that Motta foods were producing. <a href="http://en.wikipedia.org/wiki/Colomba_Pasquale" rel="nofollow">en.wikipedia.org/wiki/Colomba_Pasquale</a> -- A Milano, Pavia e dintorni vi è una suggestiva leggenda che viene tramandata insieme ad un'antica usanza di consumare a Pasqua una colomba di pane dolce in onore e ricordo di San Colombano. Si narra che al suo arrivo in città, attorno al 612, l'abate irlandese venne ricevuto dai sovrani longobardi e invitato con i suoi monaci ad un suntuoso pranzo. Gli furono serviti numerose vivande con molta selvaggina rosolata, ma Colombano ed i suoi, benché non fosse di venerdì, rifiutarono quelle carni troppo ricche servite in un periodo di precetto quale quello pasquale. La regina Teodolinda si offese non capendo, ma l'abate superò con diplomazia l'incresciosa situazione affermando che essi avrebbero consumato le carni solo dopo averle benedette. Colombano alzò la mano destra in segno di croce e le pietanze si trasformarono in candide colombe di pane bianche, come le loro tuniche monastiche. Il prodigio colpì molto la regina che comprese la santità dell'abate e che poi decise di donare il territorio di Bobbio dove nacque l'Abbazia di San Colombano, ma questa fu un'altra storia.
