Asa general thing, there is a great indiffer-ence to the matter of clothing shown bythe employes of such establishments; buton the appearance of a party of foreign-ers, two of whom were ladies, there was agrand scuffle for garments. The womenwere most successful, having had a foun-dation of under-clothing to begin upon.One boy secured a full suit. After thisthere were various toilets conspicuous bythe absence of essential garments, w^hileone poor fellow, oblivious of our presenceto the last moment, could procure nothingbut a towel. The groundmeal is mixed with water, kneaded orbeaten by an immense wooden beam, andthen transferred to the press. A perfo- rated plate beneath, through which thedough is forced by means of a ponderouslever, produces the article. Upon thisplate depends whether the macaroni has adiameter large or small, or w^iether it isflat like a ribbon. The sizes and varietiesare many, and each is endowed with a dif-ferent Italian name. When it issues fromthe press it is, of course, moist and limp.Large armfuls of it are seized by variousattendants, and ranged upon long poles,susi^ended from the ceiling, to dry. Itwas this familiar handling of the doughand the macaroni, which is flung over theshoulder, wound round the arm, and pat-ted and adjusted by the dirtiest of dirtyhands, that dei^rived our little friend ofany further appreciation of what she hadtaken to be a chaste
