Les galettes de riz sont des feuilles très minces, faites à partir de farine de riz, d’eau et de sel. Elles sont utilisées dans la cuisine vietnamienne pour faire les rouleaux de printemps ou les pâtés impériaux.

La cuisson d'une galette de riz se fait à la vapeur, la pâte ayant été étalée sur une toile très tendue, chauffée par de la vapeur d'eau. La cuisson dure moins d'une minute. Le foyer de chaleur est alimenté par des écorce de riz, dont les cendres seront utilisées ultérieurement comme engrais.

La fabrication artisanale de ces galettes de riz est effectuée dans une coopérative ouvrière de Cai Be.
English: Cooling rice paper which has been cooked

Rice paper is a very thin sheet, made ​​from rice flour, salt and water. They are used in Vietnamese cuisine to make spring rolls or egg rolls.
