In the centre of a room, a cauldron of broth is simmering over a brazier, constantly stirred by an attendant practitioner. Recipes for dietetic broths can be used both for culinary and medicinal purposes. An example of this isSihe tang(Four harmony broth), which is made with wheat flour, sesame, aniseed and salt ground to a fine powder, to be taken in boiling water before meals every day.
