Description The evening featured two dinners, both featuring traditional ingredients and dishes. Here, chef Gregory Stovall explains how he took this traditional menu of jerk chicken, collard greens, yams, black-eyed peas and corn bread and made modifications to make them healthier while still retaining flavor and satisfaction. He tries to increase flavor through adding things like carmelized onions and roasted garlic in order to be able to reduce the sugar, salt and fat in some of the dishes.
