| Description | We had some pears that weren't going to last much longer (but were still a bit crunchy) so I had a bit of an experiment. This is the Parmesan crust from the smoked bacon, leek & roasted garlic quiche, half filled with a Bakewell sponge filling (with a little cream added), covered with pear slices and topped with a crab apple jelly glaze. Flavour was spot-on but the Bakewell wasn't quite set in the middle; however, if I'd left it in the oven any longer the edges of the crust would have burned. Next time I shall double the ground almonds in the filling, not blind-bake the case but waterproof it with a little butter, and give it 30 mins in a 180 oven rather than 20 in a 200... |
