sugar and acup of water until tender. Have readya dozen blanched almonds chopped fine;mix these through half a cup of marma-lade, pineapple or orange-and-pineappleis, either of them, good. Apple, peachor apricot are not as common, perhaps,but are good for this dish. Fill theopen space in the half-pears with thenut preparation and put correspondinghalves together. Dispose the pears on aborder (shaped with two spoons) ofcooked rice. Fill the center with moreof the marmalade. Serve whippedcream or mock cream in a dish. Therice may be plain, boiled rice, or ricecooked in milk, with or without the ad-dition of two tablespoonfuls of sugar, anegg-yolk, and one-fourth a cup of themarmalade. Mock Cream Scald one pint of milk in a doubleboiler; stir two level teaspoonfuls ofcornstarch with two or three tablespoon-fuls of cold milk, then stir into the hotmilk; let cook ten minutes; add one-fourth a teaspoonful of salt and two ta-blespoonfuls of sugar and let chill.Fold in the whites of two eggs.
