 Comment There exist two kinds of fat, the outer (so called "Speck", at the back) and the inner (so called "Schmär") fat (this information now also added in the description page). The first is whitish, the second is brownish. It is said, that the "Schmär" is better than the "Speck". Both are fluid oils, if rendered down. The picture shows both, the "Speck" and the "Schmär".
