Description
English: Odisha delicacies pakhala with assorted sides—from left to right clockwise—bilati poda (barbequed tomato), saru bharta (spiced mashed-taro), kadali bhaja (pan-fried plaintain) and mahura (a cooked vegetable dish popularly known for being served in Jagannath temple). Pakhala is made by soaking cooked and naturally-cooled rice in water to which, sauteed cumin and other spices are added later. It is generally taken during summer both fresh and in fermented (by keeping outside for overnight) form.
